This gastronomic gem may be hidden away in the green depths of Hartland’s narrow lanes, but it’s well worth journeying through remote Devon countryside to find it.

The hidden idyll is where chef Aaron Vanstone and a single sous chef craft elegant and contemporary dishes in the open‑plan kitchen of an airy 24‑cover barn conversion.

Local and seasonal produce is employed in menus that take a modern approach to classical British and French fine dining.

Beautifully presented dishes are complemented by an attractive rustic setting which is almost entirely crafted from wood, and complemented by accents from contemporary blue chairs, local lino‑cut prints and milk bottles (the barn was formerly a milking parlour) full of hedgerow flowers.

Aaron’s partner Felicity Cook runs front of house, providing attentive service and wine recommendations to the diners who visit to feast on multifaceted dishes layered with seductive elements. Stuffed lemon sole, for instance, is paired with delectable surprises such as red orach and capers, wild dill pollen and blackened lemon puree.

On a warm day, a pre‑dinner tipple or even lunch or dinner can be enjoyed alfresco on tables framed by lush verdant countryside and big blue skies.
