The accomplished chef (he’s worked at award-holding restaurants across the globe) places emphasis on sourcing the bounty of local produce from the surrounding countryside and coastal waters, turning it into smart-casual dishes – think modern British classics with flair.

To do justice to the setting, dine (in warmer months) on the attractive terrace. With views over the sweeping coastline it’s an astonishingly beautiful spot for an aperitif from the hotel’s creative cocktail list before dinner.
