Country pub dining at its best

In the South West the name Hix is synonymous with fish and seafood, so when chef Mark Hix announced his next project would be a Grade II-listed country inn 11 miles from the coast, it was a surprising choice.

However, step inside the thatched 17th-century pub and it feels very much part of the Hix family. Each of the dining areas – choose between the cosy Fox Snug, light-filled Bill’s Garden Room, alfresco Kitchen Garden or private dining in Mark’s Kitchen Library – is crammed with quirky curios from the pub’s history and nods to Mark’s career. It’s shabby chic at its fabulous best.  

Dorset-landed fish and seafood take a starring role on the menus at The Fox Inn – this is a Hix establishment after all – but they’re joined by meat and veggie dishes which celebrate the region’s land-lubbing producers. A vegetable garden in the grounds supplements the kitchen with salads, herbs and seasonal veggies.

With such quality ingredients at his fingertips, head chef Lee Streeton (who’s worked with Mark on and off for 20 years, including as executive chef at HIX Mayfair) crafts unfussy dishes which sing with flavour. Beautifully cooked whole megrim sole, for example, is simply adorned with salty accents of samphire and the tart bite of capers.

The drinks list also has impressive local credentials: all he sparkling wines are sourced from Devon producers, while the pumps are stocked with regional favourites from the likes of Palmers Brewery and Gilt & Flint.

Trencherman’s tip: Mark and team are slowly refurbishing several rooms above The Fox and a collection of suites in the courtyard. The first are available to book now and would make a wonderful base for a greedy weekend in the Dorset countryside.
