Seafood in a country setting

A 16th-century country pub in the landlocked county of Wiltshire is an unlikely setting for sparklingly fresh fish and seafood.

Yet seasoned gourmets travel for miles to feast on executive chef Tom Bryant’s piscatorial masterpieces at The George & Dragon. His line-up changes daily depending on what’s been landed by St Mawes dayboats, but menu staples include roast Cornish cod with pesto crumb, olive oil mash and wilted spinach, and the house fish pie.

If you’re struggling to choose between hand-dived scallops, Cornish oysters and dressed lobster, the signature seafood platter for two – served with chunky chips and lemon mayonnaise – makes the decision a doddle. Tom’s talent for crafting flavour-forward dishes from exceptional produce extends to locally reared meat and Wiltshire veg. The à la carte offering includes crowd-pleasing classics such as duck breast with fondant potato, wilted spinach and red wine jus, and there’s also a dedicated vegetarian menu.

A textbook English pub garden is a serene setting for a leisurely lunch or sociable summer supper. You can even book the secret-garden terrace for alfresco private dining.

Trencherman’s tip: stay in one of the boutique guestrooms above the pub so you can really explore the considered wine list, which includes a good selection of organic and biodynamic bottles.
