Sustainable suppers in Shaldon

Ness Cove in Shaldon is famous for its smuggler’s tunnel and picturesque beach, but epicureans in the area know it best for its day-to-night dining concept: ODE – true food.

A buzzy, casual cafe by day, award-winning ODE transforms into a smart supper destination by night. Chef-proprietor Tim Bouget trained under Michel Roux at The Waterside Inn at Bray and brings creative flair to dishes that draw the best from Devon’s abundant larder.

Haldon fallow deer burger, pulled organic pork with south Devon chipotle, and native lobster bisque are a few of the dishes that appear on a line-up that changes weekly to reflect what’s in season. Having worked overseas for many years, Tim also likes to pepper his menus with dishes inspired by his travels in North Africa and Asia. Sustainability is central to the ODE ethos (it won a Cateys Sustainable Business Award in 2014), and the theme runs through everything from the building’s structure (solar panels, lambswool insulation and a living sedum roof) to the reclaimed wood furniture. In the open-plan kitchen, the chefs use 100 per cent renewable energy to craft dishes made with local ingredients selected for their low food miles.

Trencherman’s tip: In the summer, wood-fired sourdough pizzas are served from a vintage horsebox on the terrace.
