Family staycation destination

Classic and contemporary combine at this hotel, resort and restaurant in the wilds of north Devon. Formerly Highbullen Hotel, the estate has recently rebranded and relaunched as The Mole Resort, a contemporary destination for family breaks and active escapes.

The Arts and Crafts-era house has been respectfully refurbished and remains the focal point of the estate – book a stay in one of its Manor or Estate rooms to be in the heart of the hotel. The addition of 58 new luxury lodges within the grounds has enabled the resort to embrace larger groups and self-catered stays. Each one has a hot tub and private balcony, and there’s even an energy-positive lodge that creates more energy than it uses (the first of its kind in the UK).

Depending on their mood, guests can choose between the Cellar’s Bar and Restaurant and the more casual Bistro. Both follow the resort’s sustainable ethos of using seasonal local produce, and the team know many of the farmers who supply the kitchen by name.

The Library is a grown-ups-only space to kick back with a cocktail. The bar is stocked with artisan spirits, including The Mole’s own tequila, gin and rum, which are distilled in Somerset, plus craft beers such as The Mole IPA.
