Globally inspired Cornish fare at Source Kitchen

St Ives has long been a cultural and gastronomic magnet, attracting visitors from far and wide for its beaches, galleries and fantastic dining.

The Digey is an archetypal Cornish fishing village alleyway and is home to Source Kitchen. The restaurant is run by husbandand- wife team Stephen and Sophie Holloway, who met while training to be chefs. Their menus are inspired by their travels and love of European and Middle Eastern cuisines but are executed using the best local produce, resulting in an intimate yet informal dining experience of beautiful and unfussy dishes.

Menus change with the seasons and capitalise on the latest dayboat and line-caught (never trawled) fish, and meat from regenerative farms, sourced and aged by Philip Warren Butchers.

Guests are invited to share a selection of plates, sent from the open kitchen as and when they’re ready. Cornish oysters come au naturel, à la mignonette (with shallot vinegar) or Thai style with nahm jim dressing, while St Austell Bay mussels are served with Duchy Charcuterie ‘nduja and Cornish cream.

A wine list of UK and European wines includes six English varieties served by the glass. And if you’re a cocktail fan, don’t leave without trying a post-dinner Liquid Dessert: a Cornish Espresso Martini made using Fowey Valley Cornish Vodka and Cornico coffee roasted near Wadebridge.

Trencherman’s tip: Catch a true taste of the terroir by opting for a plate of ultra-fresh dressed Cornish crab, served with lemon mayo, pickled cucumber and crostini.
