It’s no easy task striking the balance between polished dining pub and a homefrom- home for locals looking to put the world to rights over a pint. Yet The Rising Sun’s owners, Tom and Katie Hannon, have achieved it in spades.

Truro doesn’t suffer the tourist fluctuations of its coastal counterparts, so the pub draws a year-round following of loyal locals. You can understand why they’re chuffed to call this their local: Tom and Katie have spent nine years transforming it from run-down boozer to dining destination with a zero-waste ethos and bundles of community spirit.

Chef Tom’s creativity and experience are evidenced in evolving menus that utilise the best of nearby land and sea. Relationships with local suppliers were established from day one, resulting in longstanding alliances which ensure the kitchen is supplied with fish fresh from Cornish waters, microgreens snipped that morning, and quality meats reared on South West soil.

From this bounty, Tom crafts pleasing seasonal dishes like scallops with salt-baked celeriac, apple and hazelnuts, and West Country duck with orange-glazed carrots, sprouting broccoli, parmentier potatoes and pomegranate jus.

There are tasty developments brewing behind the bar, too. Look out for the selection of team-favourite cocktails as well as a paired cigar and craft spirits list.
