This longer, lighter evolution of the Southside cocktail is a delicious companion to warm evenings spent in the garden
To mark the arrival of summer, our friends at Trevethan Distillery have shared one of their favourite seasonal serves. It’s bright, refreshing and easy to recreate at home.
Ingredients
50ml Trevethan Dry Gin
25ml fresh lemon juice
15ml sugar syrup
6–8 fresh mint leaves
Soda water
Ice
Method
1. Gently muddle mint with sugar syrup in a shaker.
2. Add gin, lemon juice, and ice.
3. Shake for 10–15 seconds.
4. Strain into a coupe.
5. Top with soda water.
6. Garnish with a sprig of mint.
Keep the mint fresh and not overworked to avoid bitterness
