Chef Kasae Fraser made it to the finals of the BBC’s MasterChef The Professionals 2023. Now working on private supper club experiences via new project Our Table, the chef reveals how she coped with the anxiety of being on the show and which other TV cooking programme she’d love to be part of

Did you learn a lot while you were on the show?

Yes, absolutely – I mean, it’s pretty much impossible not to. They send you to some really quirky places. But I think the thing I got the most out of it was the confidence in my own food and the confidence to say ‘This is what I like and this is what I want to do’ – and put it on the menu.

What was a real key moment for you?

Oh, it’s so hard to choose one. Probably making my ‘last meal on Earth’. It was an interpretation of my nan’s lemon slice. I put a huge amount of passion and effort and emotion into that dish; to have all three judges really, really like it was huge. But aside from that, probably Chef’s Table. It was amazing. There’s no other scenario where I would get to cook for all of those chefs in one room. It was terrifying, don’t get me wrong, but it was definitely a highlight.

How did you cope with the anxiety in that moment?

I remember having a lot of nervous energy while I was waiting to get into the kitchen. But it helps that you’re all there together sharing the experience and talking about it. And then as soon as you get into the kitchen and they say ‘Your time starts now!’, you kind of forget all of that because you’ve got a job to do – and only a small amount of time to do it in. So for me personally, I was okay once I got into the kitchen, but before that I was very, very nervous.

MasterChef The Professionals 2023 – completed! Any future TV plans?

No specific plans as such. But if they invited me onto Great British Menu I wouldn’t say no – that’s for sure! Sometimes they do a MasterChef Christmas special rematch. If I was invited onto that, I’d absolutely do it – I’m already planning for it!

What are you focusing on at the moment?

Our [Kasae and partner Vincent] private dining and supper clubs project Our Table – and looking for our own restaurant!
