St Michaels’ executive chef Darren Millgate is a great fan of produce grown and reared on Cornwall’s soil or pulled from its waters, so his cooking showcases the county’s freshest seasonal finds. His two-AA-rosette menus at Brasserie on the Bay include a ‘Best of Local’ selection featuring details on the provenance of dishes that have been built around a key ingredient.

In addition to the Brasserie, which specialises in ingredients cooked on the grill, the Garden Kitchen offers casual dining with wood-fired pizza and nutritious salads.

Guests will find further entertainment by wandering through luxuriant gardens, lazing in the largest hydrothermal pool in the South West, getting wrapped in seaweed in the spa and working up a sweat at the high-calibre fitness centre. Outdoor thrills include sea swimming and paddleboarding at Gylly Beach at the end of the drive.
