Following the success of his pair of London restaurants (The Loch & the Tyne in Old Windsor and Michelin-starred Frog in Covent Garden), chef Adam Handling set his sights on the South West. The result? Ugly Butterfly, housed within the stunning Carbis Bay Estate.

With wraparound views of the crystal waters of Carbis Bay, Ugly Butterfly is a venue that promises to entice, surprise and delight thanks to a duo of chefs who aren’t afraid to push the boundaries of the dining experience.

Adam works in synergy with executive chef Jamie Park to devise innovative five‑ and seven‑course tasting menus that have a relentlessly sustainable aim: nothing goes to waste. Any leftover part of an ingredient is utilised elsewhere. The stems and tops of fruit and veg are used to form the basis of cocktails, while off cuts of meat are crafted into tasty bar snacks.

In 2023, Adam was crowned Great British Menu Champion of Champions and fans of the series will delight in the opportunity to sample his banquet‑winning dessert, Food Fight. It features locally foraged Hayle strawberries with burnt butter ‘mistake cake’, long pepper custard and strawberry sorbet.
