In the picturesque Cotswolds village of Castle Combe, The Manor House exudes a magnetic energy that begins on the winding drive that leads to the 14th-century retreat.
There’s a dining experience for every occasion, with a Michelin-starred restaurant, alfresco options, the Time Bar with over 100 gins, lounges for coffee and afternoon tea, and private dining rooms. The team also run a pub in the village (The Castle Inn).
Taking its name from the river that runs through the hotel grounds, the Bybrook restaurant is the jewel in The Manor House’s crown. Executive chef Rob Potter has retained a Michelin star here since 2017. He and his brigade create exceptional seasonal dishes from local and British ingredients, enhanced by expertly matched fine wines.
The team have introduced a four-course menu in addition to the knockout full tasting experience. Feast on mains such as dover sole with wild herbs, N25 oscietra caviar and Irish seaweed butter, and Huntsham Farm middle white pork with celeriac, turnip, chard and black garlic. While every dish is exquisitely elegant, the dessert of alphonso mango with coconut, passionfruit and kaffir lime is standout.
Diners who stay over in the manor house or its mews cottages can spend time exploring 365 acres of grounds, including Italian gardens and an 18-hole championship golf course, plus Castle Combe village and many Cotswold walks.
