Georgian-inspired interiors with a gleaming modern twist await at this restaurant within the Francis Hotel. Opened in May 2025, as part of a multimillion-pound restoration of one of Bath’s most iconic addresses, Emberwood’s plush velvets, lush plants, soft banquettes and marble tables are the epitome of glamour.
Sparkling chandeliers, subtle lighting, pillars and considered decor create an atmosphere that’s further elevated by an open kitchen which allows diners to watch the chefs flame-cook dishes.
At the twinkling bar, guests socialise while sipping curated cocktails designed by Zoe Burgess from Atelier Pip. A Wonky Manhattan, for example, involves adding a splash of Somerset Pomona to Redwood Empire Rye, vermouth and bitters.
In the kitchen, executive head chef David Hazell exhibits his passion for cooking over fire to achieve deep flavours. Creedy Carver chicken from Devon, dayboat Cornish hake and sun-ripened Isle of Wight tomatoes are just a few of the quality local ingredients given due respect over charcoal.
Start with crispy Porthilly oysters or coal-roasted scallops dripping in garlic butter. Follow with dry-aged côte de boeuf and beef-fat béarnaise or whole monkfish tail wrapped in lardo.
For a sweet finish, the signature rhubarb and custard with white chocolate is a must (although a glossy yuzu-curd choux bun from the retro-glam dessert trolley is not to be overlooked).
