Ed Hughes, beer sommelier at Sharp’s Brewery, shares his hoppy spin on the classic Tom Collins cocktail
You will need
Tarquin’s Hopster Gin 35ml
Lemon juice 25ml
Sugar syrup 15ml
Doom Bar 200ml
Lemon peel to garnish
- Half fill a cocktail shaker with ice. Add the gin, lemon juice and sugar syrup then shake hard for six seconds.
- Pour into a tall glass filled with ice or serve in a Champagne flute.
- Top up with Doom Bar then garnish with a twist of lemon peel.
