Stay the night

Ugly Butterfly made waves at its former home at Carbis Bay and is now sparking surprise and delight at a new residence.

At the iconic five-star Headland Hotel, which overlooks Fistral Beach, former Great British Menu champion Adam Handling MBE (and his OG team) deliver a very special experience. Guests can expect impeccable food from boundary-pushing chefs, wines recommended by experienced sommeliers and service from an uber-efficient front-of-house team.

Adam has a bold vision for sustainable British luxury and evolves the concept here with a 4×4 menu. Four starters, four middles, four mains and four desserts allow guests to create their own journey through the South West larder. Theatrical touches abound, with a Champagne trolley to kick things off, an infusions trolley to close, and plenty of magic in between.

Culinary highlights include bluefin tuna with preserved truffles and elderflower, Adam’s signature lobster and wagyu dish which utilises sweet, small St Ives lobsters, and freshly baked Cornish apple tart – served tableside.

No visit is complete without sampling the legendary snacks, crafted from offcuts and trimmings into tiny bites of beauty.

Trencherman’s tip

Ugly Butterfly’s nearest sibling is The Tartan Fox near Newquay, but those heading further afield should schedule a visit to Adam’s other enterprises. Michelin-starred Frog restaurant, Eve bar and Adam Handling Chocolate Shop are all to be found at London’s Covent Garden, while The Loch & The Tyne pub is in Old Windsor.
