These are showcased in dishes such as netted Cornish turbot stuffed with a sea lettuce and nasturtium mousse, served with broccoli and anchovy puree, crispy hasselback Cornish early potatoes, verjus-compressed grapes, coastal herbs and nasturtium oil.
A carefully curated drinks list includes wines from producers with organic and biodynamic viticulture at their heart, along with finds from indie breweries and distilleries that share Scarlet’s low-impact approach.
