Great British Menu-winning chef Adam Handling MBE describes his Cornish pub (named in reference to his Scottish heritage) as ‘a den to escape to in the countrysideʼ.
The Tartan Fox, on a 30-acre site in rural Cornwall, joins the chef’s growing family of determinedly sustainable dining venues. It’s surrounded by an idyllic kitchen garden bursting with herbs, wildflowers, veg, fruit and beans – all used to create memorable meals while reducing supply-chain emissions.
Fellow GBM alumni and flame-cooking maestro Andi Tuck heads up the kitchen.
Start a visit with snacks of sourdough bread with chicken butter or a haggis scotch egg. Mains capture the locale and chef’s culinary style in dishes such as lightly steamed Newlyn cod, served with tomatoes and Cornish cockles.
Further Scottish connections are found on the pudding line-up: try the zhuzhed-up version of a deep-fried Mars bar with the added indulgences of salted caramel and honeycomb.
Visiting on a Sunday? Luxury roasts include lemon and thyme half roast chicken, hot-smoked moorland beef and roast pork belly with apricot and sage – complete with all the trimmings. Next-day pies and specials are made using repurposed leftover ingredients to reduce waste and keep the menu ever-changing.
Trencherman’s tip
A luxury tipi with fire chimneys is used for foodie gatherings, feasts and private hire, while a renovated barn hosts private dining, weddings and events. The busy roster includes fireside feasts, cooking masterclasses, seasonal markets, dried flower workshops, yoga mornings and art workshops with local creatives.
