Trencherman’s establishment Housel Bay Hotel is shaking things up at its Fallowfields restaurant this year. The Helston restaurant will now only offer a tasting menu, following customers’ feedback and head chef Joseph Fallowfield’s desire to be more adventurous and creative with his menu.
The seasoned chef is also making the change to best showcase the local and seasonal produce from the Lizard Peninsula, and notes that by offering one menu to guests, the team can minimise food waste and utilise specific produce that’s available in abundance.
‘It provides us with an opportunity to choose the very best ingredients, picked at their very best and cooked with our absolute undivided attention. This also gives me the opportunity to talk to our guests and explain the stories behind each of the dishes during their dining experience,’ says Joseph.
January’s tasting menu features tempting dishes such as gouda tortellini with smoked bacon, hazelnut, pumpkin sauce and truffle oil, and luscious puds like raw honey tart with apple, prune, pannetonne and brandy ice cream.
