If you’ve tried Michael’s Michelin‑starred cooking at Lympstone Manor (his flagship manor house hotel and restaurant near Exmouth), you’ll recognise his style, flair and flavours in the Signature Tasting Menu which features a number of the chef’s hero dishes. The seven‑course seasonal feast can be paired with the team’s picks from the wine cellar for an unforgettable evening of wining and dining.

While the tasting menu is a draw, the relaxed all‑day and specials menus are especially popular with locals, day‑trippers and families. Michael’s passion for fresh, local and seasonal produce is transformed into dishes such as pan‑fried fillet of red mullet with wild mushroom gnocchi and lobster and fennel emulsion. Desserts such as a dark chocolate sphere with pistachio ganache, freeze‑dried raspberries and chocolate sorbet are as delicious to admire on the plate as they are to eat.
