At the heart of Thyme, a rural estate dedicated to food, nature and the good life, lies the Ox Barn. The restaurant occupies a beautifully restored 19th-century barn whose vast timber beams, soaring arches and Cotswold stone walls remain very much intact.
Its kitchen draws heavily on the surrounding estate. Produce from the kitchen garden, orchard and farm shapes the menu throughout the seasons, creating a style of cooking that feels closely connected to place.
Ingredients are treated with confidence and restraint, from the bucatini with bottarga to the estate-grown sivan melon served with burrata, prosciutto and Thyme’s own honey. Even the salad leaves command attention, with varieties such as puntarella, tardivo and Rosa di Venezia harvested just hours before reaching the plate.
An open kitchen lends energy to the dining room, while the barn’s historic architecture ensures the setting is every bit as memorable as the food. The restaurant captures Thyme’s wider philosophy: seasonal, garden-led and rooted in the surrounding landscape.
