Scarlet was groundbreaking when it launched as an adults-only boutique eco-hotel in 2009. Head chef Jack Clayton’s passion for seafood and sustainability marries perfectly with the environmental reputation of the hotel. Having previously achieved three AA rosettes and two Bib Gourmands during his career in the East Midlands, his philosophy centres on showcasing the journey of individual ingredients, which are largely seasonal, foraged and local. Highlights of Jack’s new Cornish menu include sea-trout pastrami with horseradish, cucumber, mustard seeds and soda bread, and whole john dory with leek, parsley, lemon butter sauce and herring eggs.
